Some people have been concerned about commercially produced lettuce.
Two great microgreens substitutes are:
- Speckled Pea; and
- Sunflower.
In the photo, I am holding a growing tray full of Speckled Pea microgreens, a restaurant and customer favorite 🌱 🍽️ for these reasons:
- Appearance: Tall with short tendrils on top ✅
- Color: Vibrantly green 💚
- Flavor: Taste like peas 🫛
- Nutrients: Calcium, iron, phosphorus, and Vitamins A and C 💪
- Texture: Crunchy 😋
