Vicki Simons of NKBJ Microgreens at the Aiken County Farmers Market, where she serves customers fresh, delicious, health, and nutrient-dense microgreens.While this page is about me, my husband Michael Simons was the guiding force behind NKBJ Microgreens from August 2019 through March 2024.

We learned about the nutritional value of microgreens in 2018.

Over time, we learned the mechanics of how to grow them.

It took some time to get all of the equipment and materials assembled to start growing microgreens in our Aiken County, SC-based home.

Once everything came together, we began growing them for our own consumption.

When the time was right, we began to grow microgreens

  • as samples for others; and
  • as products to sell.

After Michael passed into the presence of our Lord, Vicki Simons took over all aspects of NKBJ Microgreens, including:

  • growing microgreens;
  • selling her microgreens at the Aiken County Farmers Market (which we started in October 2019);
  • making microgreens deliveries;
  • writing and publishing her free weekly NKBJ Microgreens Presents email newsletter (which she began writing in October 2019);
  • making social media posts; and
  • advocating for healthy eating.
